5-Minute Microwave Sweet Potato

A quick and easy way to prepare sweet potatoes in the microwave.

  • 2 pieces sweet potatoes 8-ounce each
  • Olive oil
  • Kosher salt
  • Freshly ground black pepper

  • Scrub the sweet potatoes well under running water and dry them with a towel. Remove any blemishes with a small knife.
  • Make four or five pricks in each potato using a knife or fork to let steam escape while cooking.
  • If you like, coat the potatoes with olive oil and season them with kosher salt and black pepper.
  • Place the potatoes on a plate that is safe for the microwave. Cook them in the microwave on high for 5 minutes. If your microwave doesn’t turn, flip the potatoes after 2 minutes for even cooking.
  • Check if the potatoes are tender by piercing them with a fork or knife. If they need more time, continue microwaving in 1-minute increments until they are soft. Carefully remove the plate using oven mitts.
  • Cut the potatoes in half lengthwise, then use a fork to fluff the insides.

Notes

For storage, let the potatoes cool completely and keep them in the refrigerator for up to 4 days. You can reheat them in the microwave or oven.
