Scrub the sweet potatoes well under running water and dry them with a towel. Remove any blemishes with a small knife.
Make four or five pricks in each potato using a knife or fork to let steam escape while cooking.
If you like, coat the potatoes with olive oil and season them with kosher salt and black pepper.
Place the potatoes on a plate that is safe for the microwave. Cook them in the microwave on high for 5 minutes. If your microwave doesn’t turn, flip the potatoes after 2 minutes for even cooking.
Check if the potatoes are tender by piercing them with a fork or knife. If they need more time, continue microwaving in 1-minute increments until they are soft. Carefully remove the plate using oven mitts.
Cut the potatoes in half lengthwise, then use a fork to fluff the insides.
Notes
For storage, let the potatoes cool completely and keep them in the refrigerator for up to 4 days. You can reheat them in the microwave or oven.
