Chicken Caesar Pasta Salad

  • 1 lb penne
  • 1 Tbsp extra-virgin olive oil
  • 2 boneless skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • Kosher salt
  • 2 cups chopped romaine lettuce
  • 1 cup halved grape tomatoes
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup croutons
  • 2/3 cup Caesar dressing
  • 1/2 Juice of lemon
  • 1 Tbsp freshly chopped parsley
  • Freshly ground black pepper

  • Cook the penne in a large pot of salted boiling water according to the package instructions until it is al dente. Drain the pasta and place it in a large bowl.
  • In a skillet over medium heat, add the olive oil. Season the chicken breasts with Italian seasoning, garlic powder, and salt. Cook the chicken for about 8 minutes on each side or until it is golden and fully cooked. After cooking, let the chicken rest for 10 minutes before cutting it into 1-inch pieces.
  • To the bowl with the pasta, add the romaine lettuce, halved grape tomatoes, grated Parmesan, croutons, and the chopped chicken.
  • In a separate medium bowl, mix together the Caesar dressing, lemon juice, and chopped parsley, and season with salt and black pepper. Pour this mixture over the pasta and toss everything together until well combined.

Notes

This pasta salad is perfect for meal prep or a picnic. You can also add other ingredients like avocado or bacon if desired.
